Yes, I Can!

Look at these beauties. I just canned something all by my lonesome for the first time. I feel so empowered! This is roast- and it can be made into a yummy gravy to have on top of rice or mashed potatoes, or used in enchiladas, or something like that.
My mom canned all the time, especially around Thanksgiving. Since I am squeemish around meat, I was usually in my room and not being much help. Now I wish I had learned the ropes.
I was really nervous about canning, afraid I'd do it wrong and I'd ruin the meat or make the pressure cooker explode or something. Thanks to several calls to a friend in the ward, I made it through. (Thanks Deb, for holding my hand and not rolling your eyes every time you saw my name on your caller ID!:)
This really was easy, and now I want to try canning chicken. Next time for roast though, I will get a better piece of meat. This roast was the fattiest, bloodiest piece of meat to ever to make a mess of my fridge and countertop. I did the roast in two batches, and the second run I was even cocky enough to do it when my kids were awake. Brighton was thrilled by the hissing of the pressure cooker. Hooray for food storage!

You are amazing!! I have had a turkey in my freezer for 3 months and I am still scared to can it! I kept thinking that mom would get better and she would remember how to can. Would you care to share your newfound knowledge with me? I would greatly appreciate it! And I really want to try a roast too, I love that gravy!!

Doesn't that feel great! Way to go! I've canned fruits and vegetables in the past, but have never attempted meat. Makes me a little nervous. You did a great job!

Wow! I am really impressed! When my pears (from my huge pear tree) are ripe, you need to come over and show me how to do it! We can have a canning party!

I remember your Mom showing us how to do that at an Enrichment (of course, I would have no idea if I tried it on my own!) How long does the meat keep once it is canned? I'm impressed not only that you did that, but that you did it while pregnant...that's when bloody meat bothers me most! Way to go!
